(I just purchased a used 2021 CX5 and I have the same problem - the steering wheel is pretty tight, and I have sensitive wrists and arms and just after one day of driving, I notice my arms are sore. I'd like to try to adjust the steering wheel to be looser, as everything else about the car is nice)

I noticed it was stiffer on tires that were low on tread life and towards the end. Putting on a new set of tires provided for softer steering. However, I'm sure the choice of tires matters, but I'm not sure what kind would be best for you. I never adjusted any steering settings, and I don't think it would be a good idea to do that. But if you're tires are a little worn, consider getting a new set. Best of luck,
