I have been told by the Mazda dealership that my car is not capable of locking the doors when driving off. Yet I have seen videos of it being set on youtube. Are the dealers telling the truth? Mazda Cx5 awd 2018 2.2 diesel.

Dealership would tell you half of the story, yes there is a menu for auto door lock but it's disable or not available in your country for some law or regulation.
To enable it you need Forscan a laptop and change a couple of bytes in asBuilt.
After the change is made you press Reset in Door Locks menu and AUTO DOOR LOCK MODE becomes available. Forscan is free but you'd need to request a 2 month trial license key via email to use it. https://forscan.org/support/prepare_...st.php?lang=en
