If ity has a distributor, like the older ones did, pull the coil wire, the rotor, or the stator wire (no power to the ignition system.)
If it's a later Miata with individual coils, why not disable 2 or 3 of those? The car will probably run on 2, but so badly that she won't know what's happening @ first.
But like every one else has already stated, you're playing with romantic fire here, Pal.
NightSwimmers suggestion is a good one if you ask me. She won't be late, only THINK she is until you let the cat out of the bag.
