It's a 2005 Mazda 6, and I figured we'd put on the new body kit ourselves, but how do you take off the factory body kit?

Side panels are held on with 2-sided foam tape and a series of small plastic "x-mas trees" that snap into holes along your rocker. You're going to have to start at one edge and pull it off. Those fasteners will break.

Front bumper - remove grille, remove fasteners along top edge, remove fasteners along wind shields along bottom edge, remove some push pins in the wheelwells and it should pop off.

Rear bumper is similar to the front I believe.
