Can the Mazda MPV 2006 be converted to seat 8 people? Is there a safe aftermarket seat available that could covert the front bucket seats to a bench or some other solution?

 

Speaking of safety, hauling 8 people in a 4 cylinder (assuming here) with stock brakes scares me.
The transmission might not like you as well!
You should have already changed the transmission fluid by now, if not run to the tranny shop and get er done as well as an external tranny cooler! (you'll thank me later).

The seats are integral parts of the passenger safety systems. If the vehicle is approved for 7 passengers than that is it. No one in his right mind will take on the product liability with selling some aftermarket add-on seat.
