Default Hard Start and Sputtering Around 2,000RPM

Hey I have a N/A manual 1990 Eunos miata and recently have been having some issues with it and was wondering if anyone has encountered these before or would be able to help me out!

Whenever the car is cold or it has been sitting for a bit it will not start without the use of starting spray. Even then it sometimes struggles to start. When it’s warm it will start but it tends to be a bit rough. Other then that it idles perfectly fine both warm and cold.

The other issue is most of the time, but strangely not always, when it gets to around 2,000rpms in all gears the car tends to “sputter” out and misfire with no acceleration no matter how much I press the accelerator. With persistence and some clutch once I am able to get it past 2k and around 3k it stops and I am able to accelerate and the car runs and drives perfectly fine.

Then the odd time, which I’ve been noticing a lot more recently, the car will almost want to die when I press on the accelerator and try to get going. If I apply the right amount of pressure on the accelerator I am able to get going but if not, the car will not go anywhere and the rpms will drop down to around 800 or so and sputter as well as the oil pressure will drop a bit.

Other then these issues the car runs and drives perfectly fine. The fuel pump and filter have all been recently replaced, I’ve also checked the spark plugs which are fine as well as recently replaced. I was thinking the starting issue could be caused from a faulty coolant temp sensor and then the rest from a faulty throttle position sensor or faulty fuel injectors. I am all out of ideas and not sure which route to go down.
