Default Near Term CX-5 GTR Purchase - Few Questions

I will try to spare the long story, but as of now my wife and me have 3 cars and I want to get down to two. She just bought a 2019 Subaru Forester Sport 2 months ago, she loves them. I now have a 2013 Nissan Juke and a 2014 Chevy Camaro SS (modified to 450hp at rear wheels). I used to work a lot closer to home and the Camaro was my fun car. I know have a to the city commute and use the Juke, but it's getting to that time (120k miles) where it's better to move on. Going to sell off or trade in both and get a new car.

After review, I think the Mazda CX-5 GTR is what I am looking for. I am a car guy, but have been frustrated by some questions I have that are not answered in the owners manual or on video reviews. Side note: why so few US reviews of 2019 CX-5? Too many Euro and other country based reviews. I figured this board would be the easiest path to get some answers.

Questions:
- Does the 2019 CX-5 have that engine shut off during traffic stop feature? If so, is it able to be turned off easy?
- On the turbo models, higher octane results in better power numbers; is that a spark/timing computer adjustment? How does it know it has better fuel?
- Anyone have the parchment interior? I really like that option, would like to hear any comments on it

This looks like a wildly fun and practical car, I am excited about the coming purchase. It's making my sadness at having to sell my Camaro more reasonable.
