Default mazda 3 engine heating

hi
i have a 2004 mazda 3 2.0L engine and i have some issues
lately with it.
well after i replaced water pump that leaked and one pipe i fill it up with regular water just to see that all is ok.
now the problems that i have now are that while im driving the heating goes up to 117 degrees Celsius and the vent works very fast, and the thermostat is not opening. when i stop the car and step on the acceleration slowely it opens and the heat goes donw to 103. my question is: is the regular water can cause this issue? is it important to use coolant water for the heating problem? how do i bleed the air of the system? does it has a nipple or nub to release air? the thermostat doesnt open only when im driving. if i get the car to working temperature while im not driving all is ok. also checked when this problem happens i slowley opens the gap and a lots of pressure of air gets release what helps the thermostat to open.
