check coolant in radiator, or bad sensor

as lnwlf said - make sure there's coolant in the radiator, not just the overflow.
It's possible there's a head gasket leak or similar that is blowing air into the radiator - and therefore filling the overflow tank... but at the same time, not pulling fluid back into the radiator when it cools off - a cracked radiator (bad seal) could do this before it shows up as a leak too.

Otherwise, bad sensor.

How full is full? If just to the Full line, then add more and check the light. If the light stays on then the sensor (or wiring) is bad.

If the fluid level drops in the future then you have a leak somewhere.
