Why are head bolts too long?

Why are head bolts too long?
I'm installing a new cylinder head and I got the new bolts from AutoZone, and they're way longer than the bolts that came off the car. Why? I looked online and the pictures of every set I found looks longer than the old ones. They bottom out about an inch before they hit the head. Why? I have a 1993 Mx3 1.6 and they all look way to long
