Default trying to help a friend!

Her car is a 1997 millenia 2.5 V6 (non-supercharged) with approx 179K miles. Just recently had the water pump replaced, and so far thats all i know, shes only had it for about 2 months. Today, it spewed coolant everywhere under hood, I haven't gone to look at it yet but her dad thinks it could be a head gasket.

I have a 1997 MPV 4x4 that I do all work/maint on and put a newer engine in so I'm not COMPLETELY new to mechanical problems, just hoping someone here can inform me on what to look for on the millenias!

Check the coolant overflow tank. Those are know to go bad on those cars.

Spewing coolant AND running funny doesn't sound good. But w/179k on the clock, what can you expect?
What Sheldon suggested is a good first step, but if she has only had the car a short time, and w/that many miles she may be looking at a partial, or even full engine rebuild.
Like most plastic, they are known to crack from heat/cooling cycles.
