Default Engine Temp Problem

Interesting problem since winter. After a cold start and driving for approx half hour, temp gaugeindicates cold and dosn't move. Heater starts to operate normally after few minutes and kicks out lots of warm air. After the half an hour and stoping the engine, all seems normal under the hood temp wise. The strange thing is that after another half an hour, restarting the engine, the temp gauge start reading normally. Any suggests please.

It should be at front of engine, up on top, near the center line of engine. Single wire connector with a green wire color.

I had a good look for it and was unable to identify it.
What covers do I have to remove to see this temp sensor?

Many thanks.
