I have a 2018 CX-5 with only 65k miles. Does anyone know why the rubber trim below the rear wiper would just pull itself loose? Rubber gasket below the liftgate glass is pulling loose.

Cosidering you are in Texas, it could simply be that the sun got to it after 6-7 years. Technically you could glue it back down, but if something like the rear wiper motor needed to be replaced then that rubber trim needs to come off.
As Alex said heat can do it.
You could use a clear marine adhesive/sealant to glue it back down.
It is something that will hold it but will also peel off with some pulling if needed.
I use it on my vehicles for badges and body trim instead of 3M tape.

I suspect any glass shop will be able to change that rubber. If i was a perfectionist, I'd suggest removing it entirely and reinstalling the glass with new seal. There is a chance of water leakage through that dry cracked seal.
For normal person i suspect marine sealant/adhesive is good enough ))
Have not seen such problem on any car <20 years old, but i live in moderate climate...

Well since you seem not to want anyone to know about where it hard to debate your statement of observation. However, I can say unless a vehcle is a garage queen the environment does affect soft material and plastics both interior and exterior and it is shall we say normal? LOL
I often wonder on various forums about members that join and never really fill any member information . Not even the basic like where in the world one lives?
I suppose a look at the IP address may be prudent at times .
I should correct that 20yrs statement to ~15years, owned Mazda Familia JDM 2002MY in 2016, ~200000km and god knows what mileage was "corrected", many mechanical problems, rust, but rear window was perfect (until rear ended unfortunately). Street parking only )))
it's anecdote, of course, i did not say such deterioration is not possible. I very much agree that it is possible.
Spoiler

I prefer this old school way, never really was interested in projecting personal data to internet. Do not have facebook account, even.

Oh I see not a USA resident
Not that I am trying to dig a point in, but my very "cheri" (is that term still understandable these days? ) 2009 MCS while washing it i went to open the rear hatch and the rubber cover completely out of harms way ,rain sunlight excessive heat etc., my figure tore right threw it> WTF!!!! Well kudos to you if you can tell me how that happened. I already know and curious you don't have to answer but I will post the reason later if you don't.
Background on the car to make the question even more challenging to answer as to the cause.:
Point is this is a somewhat Dailey driver (most of the time for mini vacation from Ca to Oregon up and down the coast of Ca and all around even a few times to Neveda Las Vegs and Reno . The MCS originally started it life up to 45k miles in Texas before we as the 2nd owner here in CA. There is NO Texas dirt anywhere even in the door cavities or under the car and the interior looks showroom as does the body with perfect paint. Oh and you can eat of the engine! I can provide picture I just took when I washed it the other day.

It's actually attached to the body sheet metal and lays flat against the glass. Marine glue to the rescue.
