Angry 2.3l hesitation on acceleration

I have a 2004 Mazda 3 5 Speed Manual Transmission with 275,000 miles decently maintained motor and transmission.-------
I am having issues with the vehicle bucking like a bronco under moderate acceleration and also during constant speed it happens less at higher rpms but very defined when vehicle is cold and fuel quality has no change on the reaction . I believe it is an air of fuel related issue because when I'm sitting in the driveway and she is warm I can slowly rev her up to redline but if I punch it the motor will not pass 4,000 like shes choked so to speak. I don't want to just throw parts at this motor but I believe ive heard it could be oxygen sensors, throttle body dirty, mass air flow dirty or failed, I have already changed factory matched NGK plug and it made no difference. I also feel like sometimes it could be a coil because when it does catch like the car has plenty of power and then it goes back to running choked up and bucking ....... I need to pull codes after it being cleared this week.
the last code was a coolant ECT sensor which last I checked has no effect on the vehicle acceleration .
any information is appreciated.
by the way I worked for mazda as a parts guy so feel free to get techy

Could be a bad coil, could be a bad MAF. 1st step is checking for DTC's.

Unplugging the MAF then starting it up to check for hesitation will give a good indication as to weather the MAF is bad.
