Default Help Request: 2015 Mazda 3 Random Acceleration Issue

I have a 2015 3 A/T 2.0L with 83K miles. I am pulling out my hair trying to find the cause of the acceleration issues that I am experiencing. Randomly, while maintaining a speed, the car will stop accelerating, like the fuel or something is cut off. If I let up on the throttle and accelerate again, it will come back with no issues. This is happening both around town and on the highway. Cold engine and warm. I have pulled to the side of the road and the car idles fine. The problem just disappears. I looked thru the TSB's and saw an issue with coils. The coils I had fell into the range that labeled them defective, so I replaced all 4 coils (from a 2020 Mazda). The car has new plugs and air filter too. Being that it is random, I didnt think it is an injector. It will pull a code:

PCM: P0504 - Brake Switch A/B Correlation
PCM: P2299 - Brake Pedal Position/Accelerator Pedal Position Incompatible

So, I initially thought it was a simple fix and I bought and replaced the brake switch with a new one from Mazda. Same issue. It pulls no other codes and I am thinking that this DTC is flagged simply cause the I buried the throttle trying to get it to accelerate. I do not want to fire up the parts cannon, but do any of you have any suggestions? My son gets back from boot camp soon and trying to make sure this is safe to drive.
