I've had my Mazda 2 1.5 for 3 years now, and as much fun as it is, I'd like some more power from it.

Does anyone know if there's a tuning company that specialises in Mazdas? I'd also like to get a new exhaust, preferrably a double exhaust. Anyone got any idea's of the best place to go for that too?

It is exceedingly unlikey that an exhaust in and of itself will do anything for your power levels. Said another way, you migh gain a horsepower or two at the expense of a lot of noise; not worth it in my book.
