Protegw 5 03 cooling fans

I have a 2003 Mazda Protege5 when I unplug the temperature sensor the fans kick on when I plug it back in they shut off what could cause this thank you

When you unplug it the computer goes " oh no I've no idea what the temperature is, I better run the fans full time just to be safe" Aka failsafe mode.
