will all engines receive a mechanical pump? I have been having issues with the pump in the tank and would prefer going mechanical. Is this possible? I understand I need to plumb the fuel lines and modify the pickup tube in the tank. Main question is, is there something the engine may be missing internally that would prevent the manual pump from running? Or will it be ok?

At the engine, you'll need a plastic fuel pump spacer, these days those rarely are included with a brand-new fuel pump. See https://www.oreillyauto.com/shop/fue...0pamp%20spacer

Also, trucks with mechanical fuel pumps have a fuel filter in the engine compartment, and a little clip that holds that in place.
