Heat and Overheating

Hi. I'm new to this forum and I was looking for some help. I have a 1995 Mazda 626. It has roughly 90K miles on it. I've owned it for the past 5 years and I have been having the same problem every winter:

The car runs at a normal operating temperature (as far as the guage shows). I run the A/C in the summer just fine. However, when winter rolls around and I try to put the heat on, I get a little scared. As soon as I turn the heat on in the winter, the temperature guage starts to fluctuate immediately and rise up to "H". I can't keep the heat on for more than 10 seconds without the fear that my 626 will overheat on me and blow up something in the engine. What might be causing this to happen? Any help would be appreciated. Thanks!
