what type of numbers do you think the mazda 3 could put up with out a turbo or nos but with say an exhaust, headers, cai, and sport tires?

Nothing stellar...to really get the benefit of those upgrades you need to be able to tune the fuel calibrations to optimize them. You'd need either a piggyback or a stand-alone ECM to run your fuel system, then you could get some great numbers....Do a yahoo search on Cosworth engines, they do a lot of work on the 2.3L Focus motors. 300+hp

Yes, and the Focus and Mazda3 share the same platform so two of the many engine options of the Focus are the same as the Mazda3 engines.
