I have a 1991 Mazda 626 12 valve 1.8l hatchback, lovely car but recently, when I turn the steering wheel hard (as in trying to park) the engine starts to rev ridiculously hard. Sometimes even the throttle pedal moves down.
Would appreciate any advice or suggestions.

ur sure its not a 323 ?? Lol wow sounds like an interesting problem!
it honestly sounds like your steering column might be catching on your throttle cable or something in the throttle setup. make sure everything is in order and not bent any more.

I'm 100% sure it's not a 323, I had one of them many years ago as a company car and this is twice as big!! And your'e right, it's an interesting one. Nothing bent, no cables snagging, I can't help thinking it's some sort of servo feedback but I dont know the car well enough to diagnose.
Any other ideas???
