So i was looking at these halos / angel eyes / or DDE lighst for my car. Whatever you call then they are basically a ring of light around your headlight. Like what the BMW's have. So in the instructions its mentioned something about baking your headlight assembly. Whats that all about? Do i really have to put my entire headlight assembly in the oven??

I believe it has to do with getting the headlamp re-sealed after installation. When you install those, you have to separate the headlight housing to get them in. The glue is a high heat glue to withstand the temperatures generated by the headlights while they are running.

They look cool, but too much work for me....Maybe if it actually helped to light up the road, but not just for looks......

If you have a heat gun (or more comonly a hair dryer) you don't need to put them in the oven, just heat it enough to soften the glue and pull the housings apart, then reheat and re-seal when you are ready to put them back together and possibly add a bead of silicon or new glue while you are at it.
