I believe its my coolant light that keeps coming on and off. My coolant levels are all fine. Could this just be a faulty sensor? How can I replace that myself?

Check your manual...it might be a reminder light to change your coolant (100,000 mile life)

there is a tsb on this the sensor in the overflow is glitchy, replace the overflow this is the only way to replace the sensor
